In December 2015 I was privileged to meet Alvin Starkman. He is a businessman and tour operator in Oaxaca who I believe truly appreciate the city and the people of Oaxaca and the mask out industry.

He owns and operates Casa Machaya Oaxaca a B&B and if you want to know about Mezcal he is the go to man of Oaxaca.

Alvin Starkman is a recognized authority on local distilled and fermented beverages. He is trained and licensed by the government of Mexico to lead excursions into the hills of Oaxaca to teach both Mexican nationals and visitors to the region about agave, mezcal and pulque - and related cultural adaptations. While he emphasizes all aspects of the production of mezcal and its innumerable nuances, the lifestyles of its makers is brought home through taking clients into their homes in the tiniest quaint villages peppering the region.

Alvin's mezcal tours are fully customized to meet the passions, desires and interests of individuals, couples, business partners and groups. They are anywhere from a few hours in duration (the most popular being single day excursions to visit a number of artisanal factories, known in Oaxaca as palenques) up to weeklong vacation packages for the most ardent of spirits, fermented beverage, and Mexican cuisine aficionados

The most accurate and dependable book on living life at its fullest says 'wine (or Mezcal) makes the heart rejoice' and 'makes life enjoyable' (Ps 104:15; Ec 10:19) but overindulgence can certainly lead to harm (Pr 23:29-31)!
